This Recipe Makes 4 servings
- 8oz extra lean (5% fat) ground beef
- 1 cup cooked brown rice
- 1 onion, finely chopped
- 1/4 cup grated low-fat parmesan cheese
- 3 garlic cloves, minced
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried basil
- 4 green, red, or yellow bell peppers, tops cut off and seeded
- 1/2 cup tomato puree or tomato sauce
- Preheat oven to 350F
- Mix together beef, rice, onion, parmesan, tomato sauce, garlic, thyme, and basil in a large bowl then spoon evenly into pell peppers, stand peppers in a shallow baking dish or casserole, Pour tomato puree over peppers and add enough water for baking dish to come partway up sides of peppers.
- Cover baking dish with foil and bake, until peppers and rice are tender and filling is cooked through.
- Let stand 5 minutes before serving.
Healthy Lemon Mustard Herb Chicken:
This recipe makes 4 servings
- 4 boneless, skinless, chicken breasts (4oz each)
- 1/3 cup lemon juice
- 1/3 cup mustard
- 1 tablespoon sage
- 1 tablespoon dried thyme
- 3 cloves garlic, crushed
- 2 scallions
- Mix together the lemon juice, mustard, sage, thyme and garlic
- Put the chicken breasts on a plate
- Spread this mixture over both sides and let it sit for 10 minutes
- Coat a large skillet with cooking spray and cook chicken breasts for 5 minutes each side. Use half the mixture to cook and the other half to coat as it cooks.
- Slice up the scallions, including the crisp part of the green and scatter the scallions over it before serving.
Healthy Blueberry Bran Protein Muffins:
This Recipe Makes 4 servings
- 1 cup oat bran
- 1/2 cup flax meal
- 4 scoops protein powder, a flavor of your choice
- 2/3 cup frozen blueberries
- 1 teaspoon stevia
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 3 egg whites
- 1 teaspoon maple extract
- 2/3 cup water
- In a big bowl, mix all the ingredients (Except for the blueberries). Stir until the mix gets thick
- Add the blueberries and stir
- Scoop into a muffin pan coated with cooking spray
